What I ate Wednesday!

Happy hump day! What is going on this week? I’ve had a very busy but productive week and I’m getting VERY excited for my maid of honor to visit me this weekend! I’ve been cooking up a storm since moving and I’m having the best time with it! Expect some more recipes in the near future!

Switching gears… Here are some of my eats from Monday!

Breakfast after spin class was a delicious and usual sandwich thin with almond butter and organic raspberry jam!


Mid morning, I snacked on a Baggie of roasted almonds!


Lunch consisted of a salad with my buffalo pulled chicken and a side of The One and Only, by Emily Giffen! Loving it so far!


My afternoon snack was crunch and delicious thanks to raw broccoli and the last of my GAHLIC hummus!


I rounded out the day with a delicious dinner again with my pulled chicken on a sandwich. The sides were steamed broccoli and wild rice! Love those 90 second packets!!!

Tasty Tuesday {Buffalo Pulled Chicken}

Hi there! In the mood for some spice? 🙂

Last night Mike and I had a delicious dinner of buffalo chicken sandwiches. These weren’t any chicken sandwiches though, these were a gem brought to you courtesy of my crockpot!

All you have to do is place 2-3 chicken breasts into your crockpot with your favorite bottle of buffalo sauce. I used Sweet Baby Ray’s wing sauce along with some water. The key is to make sure the chicken is completely covered, I ended up adding a little water as well.  I cooked these on low for 7 hours but do check to make sure the chicken is completely cooked.

When the chicken is completely cooked, place it into a bowl and pull the breasts apart with tongs or forks. You can serve this at this point or save it for later!

Like I said, this was a great dinner served as a sandwich, but we have also enjoyed this leftover chicken on salads!

Hey! This weekend went by way to fast but it sure was nice to spend time settling into our new home when we could!

Friday night we celebrated Mike’s birthday just the two of us! We made nachos(!!) for dinner and enjoyed them by the pool! We rounded out the evening with cookie cake, Divergent, and relaxing together!

Saturday we spent the day with Mike’s family at their new home on the water!




We had fun checking for crabs, playing games, soaking in the sun, playing with his brother’s puppy and enjoying time together celebrating their 25th birthday!

After the day on the water our great friends came over for night swimming and a few drinks poolside! It was a great day!!

Sunday was all about projects around the house! Yard work, laundry, meal planning, cleaning, and preparing for first house guest. We even went to a family dinner with my side to celebrate my aunt and uncle’s 25th wedding celebration!

When we got home our final project of the night was setting up our formal dining room! I love the final result! Now for paint!

Weekly workout recap!

Hey! Long time no see!

I’ve been so busy this week between moving, wedding planning, meeting with vendors, work, and settling into our new home I haven’t made blogging a priority but I definitely plan on getting back to it!

This week Mike and I joined a new to me gym in the area where I moved and I’ve been on a great workout streak! I’ve been getting up and going to the gym BEFORE work. Crazy talk I know! I am definitely not a morning person but I am making progress! Plus it’s really nice to have my workout done for the day! This frees up my lunch hour for errands or the occasional long walk!

My workouts for this week went as follows:

Monday- elliptical hills
Tuesday- elliptical workout and upper body
Wednesday- spinning
Thursday- body pump
Friday- elliptical HITT and upper body

I already have a few morning classes scheduled for next week at the gym! I am super excited!!! So far everyone at the gym has been super nice and the instructor was great! I can’t wait to find some new workout friends at the new gym! It was so fun when I worked out with my mom!

Friday favorites

Today is a special edition of my Friday favs!

1. My family! Through the packing, moving, engagement, and wedding planning over the last two months I’ve shared so many special memories! So much more to come too! I can’t thank them enough for all the help they’ve given us!

2. My new house!!! Hello! I’ve never had a pool or my own space before! I’m so excited to decorate! Not so excited about removing all the old wall paper!

3. Soft tissues, hah. I’ve had a bit of a cold this week (perfect timing right?) and my nose has been awfully chapped. I’m very happy soft tissues exist to help a girl out!

4. Peanut butter from Trader Joe’s. It’s just a classic.

5. Fresh tomatoes from the garden. Is there anything more perfect in the summer!?

Health benefits of swimming!

Hi guys! I have a great post coming to you today from Becky again! She is here to share some awesome tips about swimming for health and fitness!

Heart Health Benefits From Swimming
For many years I have been a runner. It was the quickest way to get in an aerobic workout. I would get dressed, put on my running shoes, and I was off. But then my knees started bothering me, and I have had to shift my exercise routine. I have started swimming a couple of days a week to cross train, and it’s great for heart health.
A great cardiovascular workout. When I work out, I’m basically strengthening my heart muscle, by making it work more. But I’ve read that when you are in the water, your resting heart rate is 10 beats per minute lower, and your maximum rate is 10 to 30 minutes lower. No one is sure why that happens, but they speculate it is because of the lowered effect of gravity and the lower temperature of the water. During the workout, that translates to more quickly being able to pump oxygen to my body, so my heart works less than it did when I was running. I like that. Here are some excellent resources with more details:

Lowering the risk of heart disease. With all of the work I do during a swim, I remind myself that I’m reducing my risk of heart disease. Swimming boosts the metabolism, which helps keep my weight lower, and thereby reduces the risk of obesity and heart disease. Several resources suggested that 30 minutes of aerobic exercise five times a week lowers the blood pressure, further reducing that heart disease risk. I don’t have a family history of heart problems, but I don’t want to set a family trend and have heart trouble. When I read that over a million people each year have heart attacks, that only strengthened my resolve to keep exercising. Because swimming strengthens my respiratory system, combined with a calming effect, those results both help keep my heart in good shape.
Talk to the doctor. Even though I had run for years, I checked with my doctor before I launched into my new swimming routine. It’s just good practice to make sure I’m in good shape medically, and he said I was fine to start swimming. He reminded me to stay well hydrated, and told me he was glad I was keeping up with my exercise.
Begin with moderation. I’ve been going to the same doctor for years, and he knows how I am, so he suggested moderation when I began swimming. He knows I used to run marathons, so he recommended I not overdo it when I started out in the water. Swimming is super aerobic and great exercise, but if you haven’t done it much, he said it would take time to build my endurance. I saw that the first time I went to the lap lanes at the pool. My running conditioning didn’t translate to the muscles I was using swimming, and I tired quickly.

What do I feel like afterward? It’s simple – after a great swim session, I feel wonderful. I leave the stresses of my work day in the pool. Getting into a good swim rhythm, my mind just lets go of whatever I was worrying about, and since I can’t hear much surrounded by water, I’m in my own little world in the pool. Even though I have to focus to keep up my momentum, there’s a lightness to the water that is very soothing. With all of that going on, I lose track of time, and the workout passes quickly.

Walking out of the gym after a swim, I’m tired, but super relaxed, and feeling wonderful. I plan to continue that experience, and strengthen my heart along the way.

What I ate Wednesday!

Yesterday was settlement day! It was so exciting! I think I am still in shock! Today and tomorrow are back to reality and routine before the big move on Friday! Yesterday we were able to move in a lot of little stuff and clothes so I felt productive! We also went to Sam’s club and stocked up on essentials! Oh the exciting life of adults! Haha!

Yesterday was a delicious day of eating! I started my day with a Kettelbell DVD so it was necessary to recover with a lot of protein! Hello eggs!


After we ran our errands we sat by our new pool to have a picnic lunch! Mike packed us a delicious picnic of chicken on salads!



After another trip of small stuff loaded into Mikes car I headed back home for dinner. Salsa chicken was on the menu and boy was it good!!!!


If you can believe it I had even more errands of last minute things to pick up last night after dinner! I would be annoyed with all the small trips if this all wasn’t so exciting! 🙂

After work I’m dropping off another load and hopefully organizing some of what I drop off before a few meetings with WEDDING VENDORS (!!!!) in the evening. This is most certainly the most exciting time of my life so far!
