Boy do I have an easy recipe for you today! This crock pot meal was a piece of cake and an easy option for a week night dinner! This can be
easily scaled for more or less servings and is sure to please a crowd! The options are endless!!!
Crockpot Southwest Chicken!
4 chicken breasts
1 can black beans (drained and rinsed)
1 can corn (drained)
1 can rotel tomatoes
1 large jar salsa
All you have to do is combine all the ingredients into the crock pot the night before you want to eat! The next morning, before work all
you have to do is turn it on to low and let it sit and simmer all day! By the time you get home from work your house will smell fantastic and
dinner will be served!
We had this with brown rice to balance out the meal! You could definitely add peppers and onions to the crock pot, we just didn’t
have any on hand. The meal really doesn’t get much easier! Now you have no excuses! Get to crock potting! 🙂
