With summer almost gone (first day of fall is this weekend!!!), I just have to share with you more delicious summery recipe before it is too late! This dish is multi-functional! It’s a great side, salsa, salad topper, and salad! The options are endless, truly!
Oh, and did I mention how easy this is!? Oh yea, I forgot, I am kitchen challenged and I only make manageable recipes!! 🙂
Summer corn salad
1c halved cherry tomatoes
3 ears corn- cooked and cut from the cob
1/4 cup diced onion
1 T olive oil
Chopped fresh cilantro ( as much as you want) and salt to taste
1/4 cup lemon juice
1 cubed ripe avocado
Simply mix all the ingredients together after you’ve done all the cutting and chopping! It really doesn’t get any easier! It’s ok if the avocado smashes some too! It just makes for. Creamy consistency! This gets better when it sits in the fridge for a few hours before serving!
Which is your favorite way to eat this? I had it really as a salsa with chips, on my salad, and as a side to my lunch one day! It is so light and refreshing!!! Not to mention veggie packed and full of healthy fats!
