{Tasty Tuesday} Super Easy Pumpkin Cupcakes

Today’s Tasty Tuesday is a fall birthday  edition! Or any event for that matter! Yesterday at work was a friend’s birthday and I wanted to celebrate her big day with cupcakes! I knew she loves pumpkin so my flavor was a no brainer. Plus it’s fall so that means everything must be pumpkin in the blog world! I found this recipe on Pinterest a long time ago so it’s definitely not my own. I just can’t find the link!

Easiest ever Pumpkin Cupcakes

Ingredients:
1 box of your favorite cake mix and 1 small can of pumpkin

1 tsp cinnamon

1 container of your favorite frosting. (I choose whipped cream cheese)

All you do is combine all the ingredients into a mixing bowl and stir until they’re completely incorporated. Note that while it is a very thick batter, you don’t need to add any more liquids. The pumpkin keeps this cupcake very moist on its own!

Once your batter is well mixed, add to 12 lined cupcake tins.

Smooth and settle the batter as you like because they will not even out like a traditional cupcake.

Bake for 20 ish minutes in a 350 degree oven or until a toothpick comes out clean.

Once the cupcakes are completely cooled ice them and decorate however you want!

These were a total hit with my coworkers! Shhh. Don’t tell them how easy it was!

Side note, these aren’t total calorie bombs either! Before the icing they only come out to about 90 calories a piece! Not too shabby! These are largest for any all gathering you have! I hope you enjoy them!
